Ground buffalo meat is readily accessible and easy to cook. Here are some wonderfully simple recipes adapted from the Great American Brand Name Cookbook using ground buffalo instead of beef. You can substitute ground buffalo for ground beef in any recipe. Just remember - be careful not to overcook the buffalo meat so it doesn’t become dry. Unlike beef, there won’t be hardly any fat left in the skillet.

Buffalo Taco Cups
|

1 pound of ground buffalo
1 packet of taco seasoning mix
3/4 cups of water
|
1/4 cup salsa
2 eight ounce packages of refrigerator biscuits
1/2 cup shredded cheddar or colby cheese
|
|
| Brown buffalo meat in a skillet; add taco seasoning and water then mix well. Bring to a boil and simmer for 10 minutes. Stir in salsa. Separate biscuits and press each one into an ungreased muffin cup. Spoon meat mixture into each cup then sprinkle with shredded cheese. Bake uncovered in 350 degree oven for 10 minutes or until biscuit cups are browned and cheese is melted. Top with low-fat sour cream. |

Buffalo and Rice Skillet

1 pound ground buffalo
1 cup chopped onion
1 eight ounce can tomato sauce

1 cup of water
2-3 Tbsp of chili powder or taco seasoning
1 cup of rice
|
|
| Brown buffalo meat and onions in skillet. Stir in tomato sauce, water, and chili powder or taco seasoning. Bring to a boil. Stir in rice. Cover and simmer for 15 minutes or until rice is tender. Remove from heat and let stand for 5 minutes. Serve with tortilla chips and top with shredded cheese. |

Mexican Buffalo-Mac

1 pound ground buffalo
1 cup of elbow macaroni
1 package of taco mix
1 package of corn muffin mix
|
1 can diced tomatoes
1 egg
1 cup water
1/3 cup of milk
1 cup shredded cheddar or American cheese

|
| Brown buffalo meat in skillet. Add taco mix, tomatoes, water and macaroni. Bring to a boil; reduce heat, cover and simmer for 20 minutes. In a medium bowl, combine corn muffin mix, egg and milk. Stir until mixed. Place meat mixture in a casserole dish; spoon corn muffin mix on top. Bake at 375 degrees for 15-18 minutes or until golden brown. Sprinkle with cheese. |

Easy Buffalo Meat Loaf
Here is a great basic buffalo meat loaf recipe that you can adapt to your own taste

1 1/2 pounds ground buffalo
2 eggs beaten
2 cups bread crumbs (four slices)
2 Tsp beef bullion or oregano
|
1 cup tomato juice or 1 eight ounce can tomato sauce
1/4 Tsp pepper
1/2 cup chopped onion
|
|
Preheat oven to 350 degrees. In a large bowl, combine all ingredients. In a baking dish, shape mixture into a loaf. Bake for 40 minutes, testing for doneness. Don’t overbake!
For variations: substitute ketchup for tomato juice; replace beef bullion with your favorite meat seasoning or onion powder. Top with some American cheese. Leftovers make great sandwiches. |

Fiesta Buffalo Meat Loaf

1 pound ground buffalo
1/4 cup chopped pepper
1 cup bread crumbs
1 egg beaten
|
1/2 cup salsa divided
1-2 Tbsp chili powder
1/2 cup chopped onion 1/4 tsp salt
|

| In large bowl, mix all ingredients reserving 1/4 cup of the salsa. In a baking dish, shape mixture into loaf and top with remaining salsa. Bake for 40 minutes. Serve with rice. |

Italian Wedding Soup
A favorite in my family and easy to make!

|
1 pound of ground buffalo
5 cups chicken broth
1/4 cup seasoned bread crumbs
2 cups chopped spinach
1 egg
|
1/4 grated cheese
1 Tsp of parsley
1/2 cup pasta (optional)
1/2 clove minced garlic
1/2 Tsp salt and pepper

Combine the ground meat, bread crumbs, egg, parsley, garlic, salt and pepper in bowl. Mix well and roll out
small meatballs the size of golf balls. Place on baking sheet and bake for 12-14 minutes in 325 degree oven. In a large pot, bring broth to a boil, add the spinach and pasta and cook until tender. Add meatballs and bring soup to a simmer. Stir in grated cheese and serve.
